Corner Kitchen: Green Chile Popper Chicken Salad

Green Chile Popper Chicken Salad


· 2 cups cooked and shredded chicken

· 3 strips of bacon, cooked and diced

· 2 green chilies (preferably Hatch)

· ½ Tbsp. olive oil

· 1/2 cup mayonnaise

· 1/4 cup green onion

· 1/2 tsp onion powder

 · 1/2 tsp garlic powder

· 1/2 tsp salt

· Romaine leaves, washed


1. Prepare the green chilies by deseeding and dicing (or purchase pre-diced from Fresh Cut in produce section).

2. Place oil in a medium skillet over medium heat. Saute green chilies until soft, about 10 minutes. Then, add 1/2 tsp salt and saute for an additional minute

3. In a small bowl combine mayonnaise, green onion, onion powder, and garlic powder

4. In a large bowl combine shredded chicken, mayo mixture, sauteed green chilies, and chopped bacon. Mix all ingredients until evenly combined

5. Enjoy immediately on lettuce leaves or store in the refrigerator in an airtight container for up to 4 days
