Corner Kitchen: Meatloaf cupcakes

· 2 lbs extra lean ground beef

· 1 cup cooked quinoa

· 3/4 cup barbecue sauce divided

· 1/4 cup chopped onion

· 1/4 cup finely chopped fresh parsley

· 1/2 cup freshly grated parmesan cheese

· 1 egg

· 1 tsp dried basil

· 1/2 tsp salt

· 1/2 tsp pepper


1. Preheat oven to 425 degrees F. Spray a cupcake tin with cooking spray or line with foil muffin liners.

2. In a large bowl, mix together all of the ingredients until well combined, reserving ½ cup of the BBQ sauce.

3. Divide the meatloaf mixture among 16-18 cups. Spread the remaining BBQ sauce over each meatloaf muffin.

4. Bake for 25-30 minutes or until internal temperature reaches 160 degrees F.

5. Allow meatloaf muffins to cool before removing from pan and serve.
