Strawberry Lemon Oat Breakfast Cookie

Ingredients

· 1 cup oats

· 1/4 tsp. vanilla extract

· 1/2 Tbsp. lemon juice

· 1/4 cup apple sauce (natural – no added sweetener)

· 1 egg, beaten

· Toppings: Lemon yogurt (such as Noosa), sliced strawberries

· Optional topping: walnuts

Instructions

1. Preheat griddle or skillet, coated with non-stick cooking spray, over medium heat.

2. In a medium bowl, combine oats, vanilla, lemon juice, applesauce and egg; stir to combine well.

3. Spoon about ¼ cup onto hot griddle cook for about 4 minutes, flip and cook until 4 minutes or until golden brown and cooked through. Repeat with remaining batter.

4. Top with toppings as desired. Serve immediately.
