Restaurant changes business model to keep workers

Before the pandemic, to-go orders were about two percent of sales for Caprock Cafe. Now it's adapted to 100 percent.

The Owner of Caprock Cafe, David Cea, said the first week was a bit hectic.

"It was real interesting because we had to change overnight in a matter of days into an entirely new business model that we've never done before," Cea said.

When you place an order, you can pay over the phone. They'll ask for your name and what you're driving and once it's ready and you're in the parking lot, they'll bring it to your car.

"We're putting systems in place here to ensure the food people order to-go comes out as fast and as accurate as possible," Cea said.

Cea said when serving food to-go, it takes longer.

"We're asking people to be really patient with us because every order now has an extra five steps to it," Cea said.

With Caprock Cafe being very new to delivery, Cea said sales with Favor are doubling every week.

"So the curbside sales and the delivery sales have enabled us to keep our doors open and 80 percent of our staff employed which is huge," Cea said.

With 350 employees, Cea said it had to adapt quickly to make sure they could all keep their jobs.

"It wouldn't be fair for us to shut down our doors," Cea said.

Cea has tried to find the positive in the situation.

"Out of this there's going to be a whole lot of new ways of doing business that's going to be good for our industry," Cea said.

He encourages you to continue to shop local, the places that will help rebuild the economy.

"We're the ones that donate to your fundraisers, we're the ones that donate to your charities, we're here, we're not going anywhere, we're not going away," Cea said.
