FOX34 Corner Kitchen: greens, ham & corn cakes

Greens, Ham & Corn Cakes


· 1 cup milk

· 1 egg

· 1 package corn bread mix

· 2 tablespoons oil

· 8 oz. ham, chopped

· 1 bag (10 oz.) frozen greens (such as mustard greens or spinach), thawed

· 1 cup corn kernels (fresh, canned, or thawed frozen)

· ½ cup plain Greek yogurt

· ½ cup salsa


1. In a medium bowl, mix the milk and egg together. Stir in the corn bread mix (batter may be lumpy).

2. In a large pan, heat one tablespoon of oil. Add the ham and cook for 2 to 3 minutes, stirring often, until slightly brown.

3. Add thawed greens, corn and ham into the batter.

4. Wipe the pan clean with paper towels. Put ½ teaspoon of oil in skillet and heat over medium heat. Drop the batter by 1/3 cup and spread to form 4 inch wide cakes. Cook for 2 to 3 minutes on each side or until lightly browned. Remove to a platter and keep warm. Repeat with the remaining batter.

5. Serve with yogurt and salsa.
