FOX34 Corner Kitchen: Shrimp Étouffée for Fat Tuesday

Mardi Gras (French for Fat Tuesday) is the intertwining of period festivals and feasts that lead to a time of fasting and reflection. FOX34's Robert Gauthreaux III is sharing his grandmother's recipe for Shrimp Étouffée:

Two pounds of shrimp
One stick of butter
Jumbo yellow onion (chopped small)
Two ribs of celery (chopped small)
One half green bell pepper (chopped small)
Parsley flakes ( 1/2 tbsp)
Bunch of green onions
One can cream of mushroom soup
One can cream of celery soup
One can cream of shrimp soup
One quarter cup ketchup
Salt (to taste)
One teaspoon liquid crab boil (Available at Walmart. Cayenne pepper okay too)
 
Melt butter in one-gallon pot over medium heat
Saute onions, celery, bell pepper until soft (about 5 minutes)
Add shrimp and cook until pink (about 5 minutes)
Add all three cans of soup and ketchup, then cook over low heat for 10 minutes.
Add parsley and diced green onions, cook 5 more minutes.
 
(If sauce is too thick, add quarter cup of milk or half and half)
 
Serve over bowl of rice.
