FOX34 Corner Kitchen: smashed crispy potatoes

· 1 package Little Potato Company Savory Herb Potatoes, microwave ready

· 3 teaspoons olive oil

· ¼ cup fresh grated pecorino cheese

· ¼ cup Wonderful Chili Roasted Pistachios, chopped


1. Preheat oven to 450 degrees.

2. Prepare potatoes according to package directions.

3. Place potatoes on a cookie sheet. Carefully smash each potato with a fork. Sprinkle cheese over potatoes and place in oven.

4. Cook potatoes in oven for about 10 minutes or until crispy and slightly golden brown.

5. Remove from oven and sprinkle chopped pistachios over potatoes; serve.
