Bison & Cabbage Stir Fry

Ingredients

SAUCE

· 2 Tbsp. low-sodium soy sauce

· 1 Tbsp. toasted sesame oil

· 1 Tbsp. Sriracha sauce

· 1/2 Tbsp. brown sugar

STIR FRY

· 1 bag coleslaw mix

· 3 green onions, chopped

· 1 teaspoon olive oil

· 1 lb. ground bison

· 2 cloves garlic, minced

· 1 tsp. fresh grated ginger

· Pinch of salt and pepper

· 1 Tbsp. Sriracha sauce

Instructions

1. Prepare the stir fry sauce first. In a small bowl stir together the soy sauce, toasted sesame oil, Sriracha sauce, and brown sugar. Set the sauce aside.

2. Heat a large skillet over medium heat. Once hot add the cooking oil, ground bison, garlic, ginger, and a pinch of salt and pepper. Cook the bison until browned and cooked through.

3. Add the coleslaw mix to the skillet and continue to stir and cook until the cabbage is slightly wilted (or fully wilted, if you prefer); stir in the prepared sauce and the green onions (set a few aside for topping).

4. Top with a few chopped green onions and a drizzle of Sriracha sauce; serve.
