Sweet Potato Avocado Brownie Bites

Ingredients · ½ cup sweet potato puree or 1 small jar sweet potato baby food

· 1 avocado

· 2 whole eggs

· ¼ cup honey · 2 Tbsp. coconut oil, melted · 3 Tbsp. coconut flour · ? cup cocoa powder

· 1 ½ tsp. baking soda

· ¼ tsp. sea salt · ? cup semi-sweet mini chocolate chips, divided.

· ¼ cup finely chopped walnuts


1. Preheat oven to 350 °F. Line two mini-muffin tins with liners or grease with oil.

2. In a mixer or food processor, combine the eggs, avocado and sweet potato; blend until smooth. 3.

3. Add the honey, oil, coconut flour, cocoa powder, baking soda and salt; mix until combined.

4. Fold in ¼ cup chocolate chips and optional walnuts.

5. Fill each muffin well with 1 tablespoon batter. Top with remaining mini-chocolate chips.

6. Bake in the oven for 15 minutes. Remove from oven and let cool for about 5 minutes.
