FOX34 Corner Kitchen: red, white & blue potato salad

Red, White & Blue Potato Salad


· 1 bag (1.5 lbs) Little Potato Terrific Trio

· 2 teaspoons olive oil

· 1 ½ teaspoon salt, divided

· ½ cup diced onion

· ¼ cup apple cider vinegar

· 2 teaspoons Dijon mustard

· ¼ teaspoon pepper

· 3 slices cooked bacon, diced

· ¼ cup chopped partially dried parsley


1. Heat oven to 425 degrees.

2. On a sheet pan, place potatoes. Drizzle potatoes with olive oil and sprinkle with ½ teaspoon salt; toss to coat. Place potatoes in oven and cook for 20-30 minutes, until fork tender.

3. While potatoes cook, combine onion, vinegar, mustard, pepper and remaining salt in a medium bowl.

4. Carefully toss cooked potatoes in mustard vinegar mixture; stir in the bacon and parsley into the mixture. Serve.
