FOX34 Corner Kitchen: turkey & stuffing dumpling soup

Turkey & Stuffing Dumpling Soup


* 3 cups chopped vegetables (such as onions, carrots, celery, broccoli, etc – consider using the leftovers from a veggie tray).

* 6 cups low-sodium chicken broth

* 1 bunch fresh parley

* 3 cloves garlic, chopped

* Optional: 2-3 tablespoons veggie dip/Ranch dressing)

* 2 cups leftover turkey, shredded

For dumplings:

* 2 cups leftover stuffing

* 1/3 cup flour

* 2 eggs

* 1 tablespoon chives


1. In large pot, bring broth, vegetables, parsley, and garlic to a boil; lower heat to a simmer and simmer for 20 minutes.

2. While the broth and vegetables cook, stir the stuffing, flour, and eggs together in a medium bowl. Set aside.

3. To the pot, carefully stir in the turkey and Ranch dressing.

4. With the soup mixture over medium heat; slowly add the dumpling mixture to the soup, one large spoonful at a time until all the dumplings are in the pot. Cover the pot with a lid and simmer for 10-12 minutes, until the dumplings are done. Serve!
