Spicy Mock Potato Salad


* 2 bags frozen cauliflower

* 1 ½ cup Primal Kitchen Chipotle-Lime Mayo

* 1 teaspoon mustard

* 1 teaspoon crushed garlic

* ¼ teaspoon salt

* Pinch of pepper

* 2 tablespoons chopped fresh dill

* 6 hard boiled eggs, peeled and diced

* ½ red onion, diced

* 3 celery stalks, diced

* ½ cup diced dill pickles


1. In a microwave safe bowl, thaw frozen cauliflower in the microwave, about 4-6 minutes on high. Or, thaw in fridge overnight.

2. In a large bowl, stir together mayo, mustard, garlic, salt, pepper and dill. Stir in cauliflower and all remaining ingredients.

3. Can serve immediately but is best after refrigerating for 2-4 hours.
