Fox 34 Corner Kitchen: No-bake spinach dip

No-Bake Spinach Dip


1 tablespoon olive oil

4.5 ounces fresh spinach, very finely chopped

2 cloves garlic

pinch of salt

1 cup plain Greek yogurt

¼ cup low fat sour cream

1 tablespoon red wine vinegar

3/4 cup crumbled feta cheese


1. Heat the olive oil in a medium skillet. Add the spinach and cook, stirring occasionally, for about 3 minutes.

2. When the spinach has cooked down, add the garlic. Stir and cook until translucent and fragrant (careful not to burn! Over­cooked garlic tastes bitter).

3. Remove the skillet from the heat and stir with the remaining ingredients until smooth.
