Brittany's chocolate chip chickpea cookies
1 1/2 cups cooked chickpeas, well-rinsed
1 tsp vanilla extract
3 oz chocolate chips
1/2 cup nut butter
1/4 cup non-dairy milk
1 tsp baking powder
3 tbs stevia or 1/4 cup honey
1/4 tsp salt (if nut butter is unsalted)
1. Drain and wash chickpeas well.
2. Add all ingredients, except chocolate chips, into a blender or food processor until smooth. Adjust liquid as needed. Stir in chocolate.
3. Drop dough by tablespoons on a greased cookie sheet.
4. Bake at 350 for 15-20 minutes, or until the bottoms are nice and brown.
